Chicken Maryland

Chicken Maryland
Recipe by Amy Beh


Ingredients
2 pieces chicken thigh (whole leg)

Seasoned flour (mixed together) :
3 tbsp flour
Dash of salt and pepper
2 tbsp oil
1 cup water
1 tsp chicken stock granules
Salt to taste
A pinch of sugar
A dash of pepper

Gravy:
1 tbsp butter
1 tbsp flour
3/4 cup diluted evaporated milk
salt and pepper to taste

Corn Fritters:
50g flour
50g self-raising flour
1/4 cup evaporated milk
1 egg yolk
1 tin cream corn (200g)

Method
Dredge chicken thigh in seasoned flour. Heat butter and oil in a large nonstick pan and pan-fry chicken. Cover the pan and fry till chicken is golden brown. Turn over the chicken when one side browns.

Add water to the pan a little at a time, cover pan and allow to simmer until chicken is tender and gravy has thickened. Remove chicken pieces to a serving plate. Leave the pan unwashed.

To make gravy:
Heat butter in the unwashed pan. Add the flour and mix it thoroughly to form a "roux" or paste. Add milk, working into the gravy. Add salt and pepper to taste.

Pour this sauce over the chicken and serve with deep-fried potato chips, fried tomato halves, fried bananas, boiled baby carrots and corn fritters.

To make corn fritters:
Sift the two flours together. Mix egg yolk with milk. Add in sifted flour. Beat till batter is smooth. Add in cream corn. Heat oil and drop tablespoon of corn batter to fry till golden brown.

Semalam me masak chicken maryland untuk berbuka puasa. Nak makan something different la kononnya semalam. Sepanjang puasa ni, me dah buat soto, nasi ayam, mee rebus, mee goreng, mihun goreng, spaghetti bolognese, fish burger...apa lagi ek...tapi semuanya terlupa nak ambik gambar. Semuanya masak ikut my kepala....sebab kalau tanya hubby nak masak apa dah tau apa jawapan dia...apa2 ajelah...tak kisah....

Me prefer berbuka dengan makanan lain selain nasi. Ada juga masa berbuka puasa tu makan nasi, tapi beli la...nasi kerabu, nasi dagang atau nasi ayam bakar/ayam penyet kat Wong Solo. Yang tak syoknya tu, hampir setiap kali kalau makan yang beli di luar, pastu me sakit perut. Me sorang je sakit perut, orang lain tak de pun. Tu tanda2 suruh rajin2 ke dapurlah tu...

Kami berbuka puasa di rumah saja, sebab me & hubby tak suka berbuka di luar - melainkan kalau terpaksa. So far lebih banyak masak daripada beli sebab hubby tak berapa suka beli. Tengok mood dia jugalah...kadang2 dia saja malas. Last year sekali aje me pergi pasar ramadhan. This year? This year belum pernah lagi setakat hari ni. Ada sekali tu singgah, hubby sorang je turun. Hehehe kalau me ikut harus tak cukup tangan nak bawa makanan...

Beginilah rupa chicken maryland yang me buat semalam (minus the corn fritters), ikut resepi Amy Beh. Dah nak tinggal tulang me kerjakan baru teringat nak snap gambo...hahahaa


Ini 2nd time me masak ni. First time dulu masa kami first time tinggal di Botswana...dalam tahun 2002 kut. Dah lama sangat kan. My doter pernah order chicken maryland masa kami stay kat satu hotel di Cameron Highlands. Tapi yang tu tak ada gravy, makan dengan sos cili saja. Sedap lagi yang me buat ni... Eh, terpuji diri sendiri la pulak...bila lagi kan? Hehehee

RASA...teringin nak buat chicken maryland...dah lama tak makan

Semasa makan....
RASA....mmmm sedap! Hubby pun cakap sedap, thumbs up... Alhamdulillah. Kembang segala2 yang boleh kembang ni....hikhikhik. Hilang sikit rasa penat buat kuih raya dan memasak petang semalam.

Selepas makan....
RASA...rasa-rasanya macam naik 2 kg berat badan ku ini... Adoi!
